This easy recipe for creamy coconut & blueberry oatmeal is the perfect fall breakfast that’ll leave you feeling nourished all morning. Gluten free & vegan!
Is there anything really better than Fall, I mean seriously? Waking up to cool, crisp air, lighting a candle, having my spirulina smoothie, & then a warm bowl of oats, is my kinda morning. As the weather becomes cooler, I know people don’t necessarily like eating a cold breakfast, which I totally get. We want to make sure our bodies stay nourished as the weather changes. With that said, I wanted to share a go-to breakfast recipe that both Devin & I love having. This creamy coconut & blueberry oatmeal recipe takes about 12 minutes from start to finish, it’s so nourishing, & of course, tastes amazing!
I definitely go through phases were I absolutely LOVE having warm oats in the morning, or even overnight oats, which can be a great grab & go idea! I also like to mix up which fruit I use, because I love the flavor the fruit gives the oatmeal. Sometimes I’ll add a blend of mixed berries, but usually I just stick to wild frozen blueberries that I get at Trader Joe’s! They’re super low in sugar & allows you to start your day with some antioxidants.
For this recipe, feel free to use any dairy-free milk of choice. I really enjoy using the organic coconut milk from Trader Joe’s that comes in a can. It’s one of the only brands of canned coconut milk that doesn’t contain any gums or thickening agents & I love that! If you’re a frequent TJ shopper, it’s the coconut milk in the yellow can! The coconut milk provides a little bit of sweetness & creates the best consistency. Consistency is key, because dry oatmeal is the absolute worst LOL!

Creamy Coconut & Blueberry Oatmeal - Vegan & GF
Ingredients
Blueberry Oatmeal Base
- 2 cups Organic Coconut Milk
- 1 cup Gluten Free Rolled Oats
- 1 TSP Cinnamon
- 1 TBSP Ground Flaxseed
- 1 TBSP Chia Seeds
- 2 TBSP Pure Maple Syrup
- 3/4 cup Frozen or Fresh Blueberries
Oatmeal Toppings
- Baked Coconut Flakes
- Sunflower Seeds
- Dastony Sunflower Butter
Instructions

Add the coconut milk to a small sauce pan on the stove, on high heat.

Add in the rolled oats & bring to a boil.

Once the oatmeal has reached a boil, stir well, & turn stove top down to medium heat.

While continuously stirring the oats over medium heat, add in the cinnamon, flax seed, chia seeds, & frozen blueberries.

Once the oatmeal mixture begins to thicken up a bit, add in the maple syrup.

Turn heat down to low & continue to stir frequently until you reach your desired thickness.

Serve immediately or store in the fridge for later.
