This 1-bowl, easy to make, gluten free, & vegan banana bread, tastes like the real deal with classic delicious flavor, added superfoods, & chopped nuts!
This recipe for gluten free banana bread is one that I’ve wanted to share for quite a while! Banana bread has always been one of my favorites, ever since I was a child. I started playing around with this recipe over a year ago, when I was introduced to a good & old school banana bread recipe from my fiancé’s mom. The recipe was pretty standard – milk, eggs, shortening, etc. I wanted to make a “healthified” version because who doesn’t love a good slice of healthy banana bread that actually tastes like the real deal!
With that said, I’m SO happy to share this healthy, gluten free banana bread recipe that is also vegan! I used two “flax eggs,” which is definitely my go-to for egg substitutions. And they’re so easy to make – I’ll walk you through the steps below in the recipe portion!
The flax egg really does mimic the consistency of a real egg.
It’s amazing what you can do with food & how you can substitute different things. Another great egg-substitute is applesauce! Although I didn’t use it in this recipe, I did in my recipe for cashew butter brownies, which are also on my site!
This easy to make recipe, only needs about 1/2 cup of sugar as well. Sometimes I exclude it completely, but I have to admit, I do love the flavor it brings to the bread. I usually like to switch it up & use 1/4 cup of organic coconut sugar & 1/4 cup of organic raw cane sugar. Both sugars are pretty similar, Lilsipper, my favorite blogger for all things gut-health, wrote a whole post comparing the two! Many people, myself included, were under the impression that coconut sugar was definitely the more healthier option of the two, but they both are great options if you choose to use sugar!
And I always love adding chopped walnuts into this recipe too! I think the subtle crunch just makes it & walnuts are amazing for brain health as well! Of course, the addition of nuts is completely optional! But it sure does taste good!
Similar to my other recipes here on the blog, I like to add superfoods whenever possible, so this recipe does contain flaxseed of course (with the flax-egg) & chia seeds! Feel free to add in an adaptogen powder like maca, hemp seeds, or more flaxseed – it certainly won’t hurt!

Gluten Free Banana Bread with Walnuts - Vegan
This 1-bowl, easy to make, gluten free, & vegan banana bread, tastes like the real deal with classic delicious flavor, added superfoods, & chopped nuts!
Ingredients
Dry Ingredients
- 1 3/4 cup Gluten Free Flour Blend
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 cup Raw Cane Sugar or Coconut Sugar
- 1 tbsp Chia Seeds
Wet Ingredients
- 1/3 cup Melted Coconut Oil
- 2 tbsp Dairy Free Milk of Choice
- 1 cup Mashed Ripe Bananas
Flax Egg
- 2 tbsp Ground Flax Seed
- 6 tbsp Water
Add-Ins
- 1/4 cup Chopped Raw Walnuts
Instructions

Preheat oven to 350 degrees Fahrenheit.

Prepare the flax egg in a small bowl. Set aside for at least 5 minutes or until it begins to "gel" up.

In a separate bowl, add the dry ingredients & mix well.

Add the wet ingredients, including the gelled flax egg, to the bowl with the dry ingredients & stir until everything is thoroughly combined.

Fold the chopped nuts into the batter.

Line a bread baking dish with parchment paper or use a small amount of melted coconut oil to grease the dish.

Pour the banana bread batter into the baking dish.

Bake at 350 degrees Fahrenheit for 55-60 minutes, or until the batter is cooked through.

Allow the cooked banana bread to cool completely before slicing.

Recipe Notes
- For flour, I use Bob's Red Mill Gluten Free All Purpose Baking Flour
- To make the flax egg, combine 2 tbsp of ground flaxseed & 6 tbsp of water. Whisk with a fork & set aside, allowing the mixture to gel up, for at least 5 minutes.
