Gluten Free Banana Bread with Walnuts - Vegan

This 1-bowl, easy to make, gluten free, & vegan banana bread, tastes like the real deal with classic delicious flavor, added superfoods, & chopped nuts!

Ingredients

Dry Ingredients

  • 1 3/4 cup Gluten Free Flour Blend
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Raw Cane Sugar or Coconut Sugar
  • 1 tbsp Chia Seeds

Wet Ingredients

  • 1/3 cup Melted Coconut Oil
  • 2 tbsp Dairy Free Milk of Choice
  • 1 cup Mashed Ripe Bananas

Flax Egg

  • 2 tbsp Ground Flax Seed
  • 6 tbsp Water

Add-Ins

  • 1/4 cup Chopped Raw Walnuts

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Prepare the flax egg in a small bowl. Set aside for at least 5 minutes or until it begins to "gel" up.

  3. In a separate bowl, add the dry ingredients & mix well.

  4. Add the wet ingredients, including the gelled flax egg, to the bowl with the dry ingredients & stir until everything is thoroughly combined.

  5. Fold the chopped nuts into the batter.

  6. Line a bread baking dish with parchment paper or use a small amount of melted coconut oil to grease the dish.

  7. Pour the banana bread batter into the baking dish.

  8. Bake at 350 degrees Fahrenheit for 55-60 minutes, or until the batter is cooked through.

  9. Allow the cooked banana bread to cool completely before slicing.

  10. Enjoy!

Recipe Notes

  • For flour, I use Bob's Red Mill Gluten Free All Purpose Baking Flour
  • To make the flax egg, combine 2 tbsp of ground flaxseed & 6 tbsp of water. Whisk with a fork & set aside, allowing the mixture to gel up, for at least 5 minutes.
