Ingredients

Wet Ingredients

  • 3 Eggs
  • 1/4 cup Nut Milk of Choice
  • 1/2 tsp Vanilla Extract
  • 2 tbsp Unrefined Cold Pressed Coconut Oil

Dry Ingredients

  • Dash of Pink Himalayan Sea Salt
  • Dash of Cinnamon
  • 1/2 tsp Baking Soda
  • 1 scoop Collagen
  • 1 tbsp Cold Milled Organic Flaxseed
  • 1/4 cup Coconut Flour

Toppings

  • Shredded Coconut Flakes
  • Cacao Nibs
  • Almond Butter

Instructions

  1. Add dry ingredients to a bowl & whisk everything together, before adding in the wet ingredients - everything but the coconut oil! Do not over mix the batter. If the batter is lumpy, that is okay. 

  2. Heat a skillet with a spoonful of coconut oil. 

  3. Place the batter on the skillet. The batter will become a bit doughy, so spread the batter with a fork to make a circular shape. 

  4. Cook on medium to high heat until you see little air bubbles appear on the pancake.

  5. Flip & cook the other side. This recipe makes about 8-10 pancakes based on your preferred size. 

  6. Add toppings & enjoy!
