This triple berry cobbler is the perfect option for a sweet breakfast that the entire family will love! Naturally gluten free, dairy free, & vegan!
Growing up, my mom always used to make a triple berry breakfast cobbler like this for us, usually on Sunday mornings & it still to this day, is one of my favorite things she’s made, ever! A few weeks ago, I wanted to recreate the classic cobbler but I wanted to make a healthified version of it & boy, did it turn out amazing! I knew I had to share! Although I do enjoy a savory breakfast from time to time, I would 99% prefer a sweet option. I could easily eat this triple berry cobbler every single morning!
When you think of a cobbler, a lot of sugar probably comes to mind, but I’ve found that you really don’t need a ton of added sugar with this triple berry cobbler because the berries really do provide enough sweetness. Now I did use a bit of coconut sugar but only a 1/2 cup total for both the filling & cobbler topping. I prefer coconut sugar over raw cane sugar, but honestly, there isn’t too much of a difference between the two, so either would work for this recipe!
And when it comes to berries, feel free to use whatever you have!
I used equal parts of frozen blueberries, blackberries, & raspberries. Don’t hesitate to substitute cranberries or strawberries, or a blend of mixed berries, either frozen or fresh! And don’t forget to save some fresh berries to serve with your hot cobbler! I had some fresh strawberries on hand which paired beautifully with the little cobbler oat-milk yogurt parfait that I made, shown in the photos below!
And be warned, this cobbler probably won’t last a few days in the fridge…it will be gone before you know it because it’s THAT good! This triple berry cobbler didn’t even last a full day in my house. I made it for Devin & I about two weeks ago & we of course, had it for breakfast & then we finished it off for dessert after our dinner! Although it’s insanely tasty served warm, right out of the oven, it’s even good served cold which can make for the perfect little dessert!
No matter how you serve it or what berries you include, this cobbler is sure to be a hit. It takes just under 30 minutes in the oven & the bubblier, the better! You can see in my photos that the berry filling definitely started to overtake the crumble mixture on top!
And of course, you know I had to add some extra superfoods & nutrients into this dish as well! In the recipe below, you will see the addition of flaxseeds, chia seeds, & hemp shells, which I love adding into any breakfast I make, to ensure a fuel-filled day! Completely optional & delicious either way!
And did I mention that this breakfast cobbler is naturally gluten free, dairy free, & vegan!? No need to make substitutions if you have food allergies or restrictions, because it’s already good to go! That’s one of the main reasons I LOVE sharing healthy, gluten free, & now plant based recipes on my blog because I really enjoy showing people that eating healthy doesn’t have to taste horrible. The food can be so much fun & still extremely enjoyable!

Instructions
-
Preheat the oven to 375 Fahrenheit.

In a small saucepan, on medium heat, combine all of the berry filling ingredients, & bring the mixture to a simmer, stirring frequently.

Once a simmer is achieved, turn heat down to low & continue to stir the triple berry mixture until it reaches a thicker consistency.

Pour the thickened berry mixture into a baking dish that has been greased with coconut oil to prevent sticking.

-
Add the wet ingredients to the bowl (melted coconut oil, dairy free milk, & vanilla extract), & mix well to assure all of the dry ingredients are coated.
-
With a spoon, scoop the cobbler topping onto the triple berry mixture, already in the baking dish.
-
Bake the cobbler at 375 Fahrenheit for 25-30 minutes or until the berry filling is bubbly.
