These energy boosting, mood balancing, Raw Cacao Truffles made with maca powder, make for a perfect, healthy, vegan dessert or mid-day snack!
I’ve been playing around with the idea of a recipe for these raw cacao truffles balls for a few weeks now because I’ve been getting the most delicious dates. I love the consistency of a date when it’s blended…it creates a dough like texture which I used to created the tastiest, healthy, chocolate truffles! If you can’t quite put your finger on the consistency I’m describing, think about a LÄRABAR but more rich in taste!
Speaking of LÄRABAR, there’s another snack bar that I really like by the brand Pure Organic. They have some great options if you are looking for a really clean fruit & nut bar! As soon as I tried these raw cacao truffles, they immediately make me think of a Pure Organic bar flavor called Chocolate Brownie – minus the cane sugar!
These vegan truffles are the perfect after dinner treat but that’s not to say that you can’t enjoy them at any time in the day, let’s be honest! I stored them in the fridge after I dusted the rolled balls with just a little bit of sifted cacao powder, for just a little something extra!
All you need to make these raw cacao truffles is a handful of real, wholesome ingredients & either a food processor or blender. You know how much I love my Vitamix blender! I have a dry container attachment to use with my Vitamix which has a blade that can easily process food instead of liquid, which is what I used to make these truffles. Even if you don’t have a Vitamix, this recipe is still very much doable, it just may take more time in the blender!
So let’s break down the three main ingredients used!
RAW CACAO
One of the main ingredients in this raw cacao truffle recipe is obviously raw cacao powder. If you missed my last post on raw cacao, you can read it here. But basically, raw cacao is an amazing superfood & is the purest form of chocolate. Not to be confused with actual chocolate, raw cacao can be bitter in taste for some, but no worries here, because with the natural sweetness of the Medjool Dates & a little maple syrup, these truffles have the perfect amount of sweetness for any chocolate lover!
MACA POWDER
The second main ingredient is small but mighty. For this truffle recipe, I added an adaptogenic maca blend! Adaptogens are natural substances to help reduce the amount of stress within our bodies, along with a handful of additional benefits! Maca is a root powder, which is high in nutrients, helps improve your mood, lowers stress levels, benefits your skin, & boosts energy levels!
For this particular truffle recipe I used a brand called Moodbeli for this added dose of adaptogens! I was recently introduced to Moodbeli’s adaptogen blends & was so impressed with their beautiful blends of ingredients, the quality of their products, & their packaging is also insanely gorgeous! Overall, fantastic brand. I used their Cacao, Maca, & Cayenne Bliss Booster!
DATES
The secret to the doughy texture of these truffles is due to dates! I LOVE Medjool dates, SO much. Dates are such an excellent natural sweetener & can completely satisfy my sweet tooth! They are so nutritious, high in antioxidants, high in fiber, & are actually able to promote brain health!
I used 15 dates in this truffle recipe because my dates were relatively small in size. Feel free to use between 10-12 if you have larger dates! You also have to make sure they are soft, which most dates are, but I like to soak them in hot water for at least 5 minutes so they are able to blend easily!
Also just a tip, be sure to check the inside of your dates before using them in a recipe and or eating one in general! There can be some funky stuff lurking inside the dates, so just double check! Check out this post to see what to keep an eye out for!

A recipe like this makes adding an adaptogen blend so easy. So many people like the idea of adaptogens but they never know how to incorporate them! With the combination of the dates, the raw cacao powder, & the maca, these raw truffles are so healthy, so nutritious, & make for the richest chocolate treat! Right up my alley! 🙂
Below in the recipe, you will see that I added coconut flour to the truffles to provide a bit more substance. Although I added coconut flour, but you could definitely substitute almond flour or an oat flour. My second choice, behind the coconut flour would be the oat flour. I like making my own oat flour by blending rolled oats in a blender until it turns into a flour-like consistency! Just a little tip..also saves some $$$!

Raw Cacao Truffles made with Maca Powder

Ingredients
- 15 Pitted Medjool Dates
- 3 tbsp Raw Cacao Powder
- 1/2 cup Coconut Flour
- 3 tbsp Almond Butter
- 3 tbsp Maple Syrup
- 1 tbsp Melted Coconut Oil
- 1 tsp Maca Powder or Adaptogen of Choice
- Dash of Cinnamon
- Dash of Sea Salt
Instructions

Soak dates for 5 minutes in hot water to soften them.

Drain the dates & add them directly to a food processor or high speed blender, along with the rest of the ingredients.

Blend until the ingredients create a dough-like consistency. If you are using a blender, you may need to stop & scrape down the sides in order for it to continue blending.

When the "dough" is achieved, separate & roll it into small to medium size balls. I was able to make 18 small truffle balls following this recipe.

Sift a tsp of raw cacao powder on top of the truffles for a light chocolate dusting!

Enjoy now or store in the fridge for later!
Recipe Notes
- I used 15 small Medjool dates for this recipe. If you are using larger dates, you may only need to use 10-12 at most!
- Although optional, this recipe is a great way to incorporate adaptogens. I used Moodbeli's Bliss Booster which is a blend of maca, cacao, & cayenne.
- If you find that your dough is too dry, try adding another 1/2 tsp of melted coconut oil!
