Happy Sunday! I’ve been on a roll baking lately – homemade granola included! Every morning, I make Devin a big smoothie bowl topped with granola, but we ran out of the one I usually use, so I wanted to make my own! I threw together this delicious peanut butter granola that is of course, gluten free & vegan in about 45 minutes & we both enjoyed it on top of our choice for breakfast & now have a ton left over for the rest of the week!
This is my second granola recipe that I’m sharing here on the blog, I posted a recipe for Almond Coconut Granola last Spring, so if you prefer almond butter instead of peanut butter, be sure to check that one out, because it’s just as tasty & can be enjoyed a variety of ways! As this granola recipe can too! I always like having a little granola to snack on while I’m in the kitchen or I like to enjoy it over some dairy-free yogurt, with a sliced banana, a dash of cinnamon, & sometimes a few walnuts or cacao nibs!
It’s been a while since I’ve made my own granola! I personally have been enjoying a brand called Purely Elizabeth’s which has really clean ingredients & is absolutely amazing, but wow, it can be pricy! Which most granolas are, especially if they’re gluten free! Not only is making your own homemade granola easier on the pockets, but it’s also a much healthier alternative than most store-bought granolas! So it’s a win-win!

Like my last granola recipe, this one is super simple to make. It only contains a handful of ingredients, one being peanut butter, of course. And if you don’t like peanut butter, feel free to sub almond butter, cashew butter, etc.! And I also included a good amount of chia seed & ground flaxseeds because I like to sneak those in whenever possible! This peanut butter granola also doesn’t have any refined sugar, but rather maple syrup for a subtle hint of sweetness!

Peanut Butter Granola - Gluten Free + Vegan
Add this delicious peanut butter granola on top of yogurt, fresh fruit, a smoothie bowl, or enjoy on it's own as a snack! Healthy, minimal clean ingredients, gluten free, & vegan!
Ingredients
Dry Ingredients
- 4 cups Gluten Free Rolled Oats
- 3 TBSP Ground Flaxseed
- 3 TBSP Chia Seeds
Wet Ingredients
- 1 cup Smooth Peanut Butter
- 4 TBSP Pure Maple Syrup
- 4 TBSP Melted Coconut Oil
- 1 TSP Vanila Extract
Instructions

Preheat over to 325 degrees Fahrenheit

Combine all dry ingredients in a large bowl. Mix well.

Add in the wet ingredients. Mix until all of the oats are coated. The oat mixture will be crumbly...that is normal!

Line a baking sheet with parchment paper & pour the granola onto the tray. Spread out the granola evenly.

Bake for 20 minutes.

Remove the tray from the oven & let the granola cool for 20 minutes so it's able to get crunchy! After it cools down, enjoy right away or store in an air-tight container for up to 5 days!
