I’m excited to share these amazing naturally gluten free & vegan banana blender pancakes with you today! I made them last weekend & they hit the spot, took only a few minutes to make, & were really filling! Pancakes are a personal favorite of mine & these healthy banana pancakes definitely are my new go-to’s if or when I need a change up from my morning smoothie! All you need is a blender! Seriously, they’re that easy – no flour, butter, or eggs necessary!
Banana Blender Pancake Ingredients
SUPER simple ingredients! Rolled oats, dairy free milk, bananas (ripe/spotty is preferred), flaxseed, baking powder, cinnamon, vanilla extract, & apple cider vinegar to help make them a little fluffy! Add everything to a blender & viola! I used my Vitamix blender & blended the pancake batter for about 45 seconds! Like I said, this recipe doesn’t call for any flour because when you blend the oats, they help bind together the batter & also gives the pancakes their fluffy texture & hearty taste! For oats, I prefer to use gluten free, organic, whole grain rolled oats.
How To Make These Healthy Banana Pancakes
After adding all of the ingredients (full recipe below!) to your high speed blender, heat up a skillet, & add a scoop of cooking oil! I personally used coconut oil & continued to add more into the pan as I cooked each pancake. After the pan & oil is hot, add about two tablespoons of the banana & oat pancake batter to the pan…you can use the back of the spoon to make the batter into a circular pancake shape. Cook each pancake until golden brown or little bubbles appear on the top. The coconut oil helps give them a nice golden brown color too! Flip & cook the other side!
This healthy banana pancake recipe will yield about 8-10 medium size pancakes. Depending on how large or small you make each pancake. After the first batch I made, I immediately headed back to the kitchen to make another identical batch. They were TOO good! Feel free to add your toppings of choice too – sliced banana, chopped nuts, a drizzle of nut butter, fresh fruit, or extra cinnamon! And of course, maple syrup!

Ingredients
- 2 cups Organic Gluten Free Rolled Oats
- 2 Bananas
- 1/2 cup Dairy Free Milk
- 1 tbsp Apple Cider Vinegar
- 2 tsp Baking Powder
- 1 tsp Pure Vanilla Extract
- 1 tbsp Ground Flaxseed
- 1 tsp Cinnamon
Instructions

Add all of the ingredients above into a high speed blender & blend until everything is well combined.

Heat a skillet on your stove top & put a large spoonful of coconut oil in the pan to help the pancakes cook. Heat the pan until the coconut oil is melted.

Using a spoon, scoop out about two tablespoons of the banana pancake batter onto the hot skillet, you can use the back of the spoon to spread the batter out, making a circular pancake shape.

On medium heat, let the pancakes cook for about 30 seconds to a minute before flipping over to cook the other side. Add more coconut oil if necessary to avoid the batter sticking to the pan. Watch the pancakes closely so they don't burn!

Depending on the size of your pancakes, this recipe will yield about 8-10 medium sized pancakes.

Add any desired toppings & enjoy!
There’s so many fun toppings that you can add to make these pancakes even tastier. But even if you just add a little drizzle of maple syrup, they will be just as delicious!
