This easy & healthy, almond coconut granola recipe is not only vegan & gluten free, but it’s also naturally sweetened, crunchy & delicious!
I’m excited to share a new recipe with you all for a healthy homemade almond coconut granola! Making homemade granola is something I’ve wanted to do for some time now. There are a few in-store brands that I really do enjoy, but gluten free granola can get expensive pretty quick! I also just love the idea of having full control regarding the ingredients used, because there can definitely be some sneaky sugars & oils hidden in your favorite bag of store-bought granola! This crunchy granola turned out SO delicious, made my entire house smell amazing, & only took about 30 minutes from start to finish!
Before I share, I wanted to thank Windy City Organics for sending over some of their amazing products for me to create some new recipes for you all! I’m already such a huge fan of their products…nut butters included, which is what I used to make this healthy granola recipe! Their nut butters do not contain any added oils or salt, which is always appreciated in my kitchen! Yet another thing you can control when making things homemade!
For this almond coconut granola, I used the Dastony Sprouted Almond Butter as one of the base ingredients. As mentioned, I really love the WCO’s line of Dastony nut butters & this almond butter I used is even more amazing because the almonds have been sprouted, which is awesome for digestion!
Almond Coconut Granola Ingredients Breakdown
When it comes to ingredients, I try to keep things as simple & as clean as possible. The ingredients for this clean granola recipe are whole, real ingredients that will keep you feeling full, provide you with nutrients, protein, & fiber, & will help give you energy until your next meal!
This vegan granola is also naturally sweetened with a bit of pure maple syrup. Feel free to eliminate it completely or sub it out for honey. Although I am now eating an intuitive plant based diet, I still consume honey, here & there, but not often. Maple syrup is a wonderful alternative for a sweetener & is full of minerals…but you have to make sure it’s pure & not processed!

To make my granola parfait, which makes for a great little breakfast or mid-day snack, I used a handful of the healthy almond coconut granola, a scoop of Nancy’s dairy-free oat milk yogurt, a sliced banana, shredded coconut, some goji berries, & a sprinkle of Ceylon cinnamon! So easy & delicious!

Homemade Almond Coconut Granola
This easy to make, healthy almond coconut granola recipe is not only vegan & gluten free, but is also naturally sweetened, crunchy & delicious!
Ingredients
- 3 cups Gluten Free Rolled Oats
- 1/2 cup Shredded Coconut Flakes
- 1/2 cup Chopped Raw Almonds
- 3 tbsp Chia Seeds
- 2 tbsp Ground Flaxseed
- 1 tsp Cinnamon
- 1/2 cup Smooth Almond Butter
- 1 tsp Vanilla Extract
- 2 tbsp Melted Organic Coconut Oil
- 2 tbsp Pure Maple Syrup
Instructions

Preheat the oven to 325 degrees Fahrenheit.

Mix the gluten free oats, coconut, chopped almonds, chia seeds, flaxseed, & cinnamon in a large bowl.

Add in the wet ingredients (almond butter, coconut oil, vanilla, & maple syrup) & make sure all of the oats are coated.

Line a large baking sheet with parchment paper & spread out the granola evenly.

Bake for 20 minutes.

Let the granola cool completely because this helps to make it crunchy! After it's cooled, store in an air tight container or serve right away!

This looks soooo good! I would love to make a huge batch of this to store in a container. It would be nice to sprinkle in pudding or eat with fruit on the go. Also, I’m trying to make more environmentally sustainable choices, and incorporating more vegan foods seems to be the best & easiest way to do that. ♥️
