These gluten free macadamia nut cookies will knock your socks off! Not only are they gluten free, but they’re vegan, refined sugar free, & SO delicious!
It’s been years since I’ve had a good macadamia nut cookie, mostly because I can NEVER find them gluten free! They are seriously one of my all-time favorite cookies. I initially wanted to put white chocolate chips in this recipe as well, but unfortunately I couldn’t find vegan white chocolate in a store near me, so I left it out, but that’s not to say these cookies aren’t to die for!
Don’t they look like little clouds?! After I made them, Devin kept coming into the kitchen asking for another! The texture of these vegan cookies is so soft & chewy, it’s seriously hard to stop eating them, believe me!
The main ingredient I used to make these delicious macadamia nut cookies is the Raw Macadamia Nut Butter from Dastony & Windy City Organics. All of their nut butters are raw, don’t contain any added salt, sugar, or oils, & are stone ground. I think due to the nut butter being stone ground, it helped create the gorgeous texture of these cookies, because this recipe doesn’t call for any eggs or regular flour!
This recipe for gluten free macadamia nut cookies is as simple as it gets, but oh so delicious. It’s an adaption from Kale Junkie’s Life Changing Tahini Chocolate Chip Cookie recipe. I kept the same measurements regarding the nut butter to flour ratio, but adjusted the recipe to make it vegan.
The key when making these cookies is to combine the first few ingredients & then let the batter sit in the fridge for 30 minutes. This process really helps create the amazing consistency of the cookies.
If you don’t have macadamia nut butter, you can make your own by blending up raw macadamia nuts or you can simply sub it for another nut butter of choice! Almond or cashew butter would be a delicious alternative for the macadamia butter! This recipe also calls for a cup of raw macadamia nuts, so it’s up to your personal preference if you want to keep the nuts or sub them out for a chocolate of your choice! Just make sure the measurements stay the same!
These plant based cookies are also refined sugar free, which is always important for me when baking. I just don’t see the need to add in a ton of sugar to make something taste good. In order to sweeten these macadamia nut cookies, I added maple syrup, which is my favorite natural sweetener. You seriously cannot tell that #1 these cookies are gluten free, #2 these cookies are vegan, & #3 these cookies don’t contain any refined sugar!
They are THAT good!

Gluten Free Macadamia Nut Cookies
These gluten free macadamia nut cookies will knock your socks off! Not only are they gluten free, but they're vegan, refined sugar free, & SO delicious!
Ingredients
- 1 cup Smooth Macadamia Nut Butter
- 1 cup All-Purpose Gluten Free Baking Flour
- 1 cup Chopped Raw Macadamia Nuts
- 1/2 cup Pure Maple Syrup
- 1 tsp Baking Soda
- 1 tbsp Ground Flaxseed
- 3 tbsp Water
Instructions

Combine the macadamia nut butter, the gluten free flour, & maple syrup together in a large bowl.

Put the batter in the refrigerator for 30 minutes. This helps the batter get to a perfect consistency when baking.

Preheat the oven to 350 degrees Fahrenheit.

Combine the flaxseed & water in a small bowl. Whisk & then set aside for the flaxseed to "gel" up.

After 30 minutes in the fridge, remove the batter & add the gelled flaxseed, chopped macadamia nuts, & baking soda. Mix well. The batter will be thick & sticky.

Scoop the batter into medium sized balls & arrange them on a lined cookie sheet.

Bake for 12 minutes.

Sprinkle a little Pink Himalayan Salt on top of the cookies & enjoy!
Recipe Notes
- I used Dastony Macadamia Nut Butter
- For flour, I used Bob's Red Mill Gluten Free All-Purpose Baking Flour
- The ground flaxseed is crucial to this recipe & is not optional. The gelled flaxseed acts as an "egg".
- If you're low on time, you can skip the refrigerator step but it definitely makes a big difference.
